Ingredients:

6 cups mixed salad greens
1 cup fresh pineapple, diced
1/2 cup red bell pepper, thinly sliced
1/2 cup red onion, thinly sliced
1/2 cup macadamia nuts, toasted and roughly chopped
1/4 cup feta cheese, crumbled
1/4 cup coconut flakes

Instructions:

In a large salad bowl, combine the mixed salad greens, diced pineapple, red bell pepper, and red onion.

In a small skillet, toast the macadamia nuts over medium heat until they are lightly golden and fragrant. Let them cool before roughly chopping.

Sprinkle the toasted macadamia nuts, crumbled feta cheese, and coconut flakes over the salad.

Drizzle your favorite vinaigrette or dressing over the salad just before serving.
