Ingredients:

4 Mahi Mahi fillets
1 cup macadamia nuts, finely chopped
1/2 cup panko breadcrumbs
1/4 cup fresh parsley, chopped
Salt and pepper to taste
2 eggs, beaten
2 tablespoons olive oil

Instructions:

Preheat your oven to 375°F (190°C).

In a bowl, combine the chopped macadamia nuts, panko breadcrumbs, chopped parsley, salt, and pepper.

Dip each Mahi Mahi fillet into the beaten eggs and then press it into the macadamia nut mixture to coat both sides.

In an oven-safe skillet, heat the olive oil over medium-high heat.

Add the coated fillets and cook for about 2-3 minutes on each side, until they are golden brown.

Transfer the skillet to the preheated oven and bake for an additional 8-10 minutes, or until the fish is cooked through and flakes easily with a fork.
